In the Renaissance the Estensi made their court famous for legendary banquets and Ferrara a domain of several special flavours. This rich cooking tradition has been transmitted till our days. Among the main dishes of this city, you can find “cappelletti in brodo” (small pasta filled with meat served in broth), “cappellacci di zucca” (pasta filled with pumpkin), the “pasticcio di maccheroni” (pasta with besciamel, sweet or salty) and the much savoury “salamina da sugo” with mashed potatoes. You cannot lose to taste our cakes: the “pampepato” devised in the XVIIth century for a Papal visit and the delicious cakes as “Tenerina”, “Tagliolina”, “Zuppa Inglese” and the traditional “Ciambella Ferrarese”, excellent if tasted with the local wines. A particular note deserves our bread as the “coppia ferrarese”, soft and fragrant inside, golden and crunchy outside.
